Hillersden – Sauvignon Blanc
Hillersden Single Vineyard Sauvignon Blanc delivers the Upper Wairau Valley in a glass. Brightly tropical and stone fruits with just the perfect seam of acidity.
Bursting with intense aromas of lemon, lime and bergamot, with stone fruit notes offering a bit of complexity on the mid-palate and finishing with crisp passionfruit. Deliciously drinkable on its own, we also suggest pairing our Sauvignon Blanc with fresh seafood, grilled spring vegetables, and feta or Chevre cheeses.
The 2017 harvest showed all the vitality of youth with bright yellow fruit and delicious acid. Hillersden soils are a mix of alluvial and glacial gravels interspersed with clay and sandy loams. Yields were low at 10 tonnes per hectare. We are finding that the intense sunlight here is a defining feature for our Sauvignon Blanc style. Since the Upper Wairau is a cooler, wetter sub region of Marlborough our best tool is an open canopy where sunlight penetration and heat shapes the flavour of our fruit. Pyrazine compounds responsible for the bell pepper found in typical Marlborough SB are broken down by the extra UV light, and the added heat brings yellow fruits and tropical flavours.
6% of the harvest was pressed into older French oak barrels, half of which we allowed to fer- ment with wild, indigenous yeast from the vineyard. The remainder of our grapes were pressed carefully to stainless steel tanks where the juice spent three weeks fermenting at cool tempera- tures. Post ferment we allowed the wines to rest on yeast lees for a prolonged period to take advantage of the natural benefits of autolysis – mouthfeel and natural antioxidant protection. No fining agents other than bentonite clay were used in the making of this wine so it is vegan friendly and gluten free. It is immensely enjoyable now but unlike most other Marlborough Sauvignon Blanc ours will be suitable to age for a few years. 1330 cases made.

Bursting with intense aromas of lemon zest, bell pepper, and nettle, with lively stone fruit notes add allure and complexity. This cooler microclimate delivers a wine with elegant arrays of delicious flavour – a combination of jalapeño, zesty apple, and a crisp passionfruit finish. Whilst this exciting Sauvignon Blanc is deliciously drinkable on its own, we suggest that you explore the sensational pairing of Hillersden Sauvignon Blanc with fresh seafood and grilled spring vegetables.
The most mature of the Hillersden vines are planted over two terraces of the ancient riverbed. Here we find a wide variety of topsoil and subsoil combinations. Such versatility means that come blending time we have all the components of brilliant Sauvignon Blanc from our unique single vineyard. Tropical fruits with softer acids from the sandy soils, passionfruit and body from the clay, citrus and minerality from the gravels, as well as vibrant jalapeño greens and acid from the silt loam. The result is a snapshot of our beautiful place translated into the glass.
Our harvesting team started picking in the cool dark of early morning. The 2016 vintage was fermented in stainless steel using yeast strains isolated to accentuate aromatics. Post ferment maturation on fine lees gives the wine a refined texture to compliment the exuberant flavours. The wine was blended from 4 different parcels, each of which add their own character.
